WoW! Fun in the Sun….Seaside Half-Marathon 2010

We worked hard at boot camp and on our weekly training runs.  Our base was solid so we arrived confident!

Lime Cilantro Chicken with Fresh Black Bean Salsa

Black Bean Salsa

1 red bell pepper, diced
1 orange bell pepper, diced
1 yellow bell pepper, diced
½ cup diced sweet onion
1 can shoepeg corn, drained
1 clove garlic, minced
1 can garbanzo beans
1 teaspoon fresh cilantro
¼ cup olive oil
4-5 tablespoons red wine vinegar
1 teaspoon lime juice
Freshly ground pepper (I prefer cayenne pepper to add heat)
Sea Salt
1 can (15 ounces) BUSH’s BEST Black Beans (low sodium), drained 

Cut all the bell peppers and red onion into ¼ inch dice. In a salad bowl, combine bell peppers, onion, corn kernels, garlic, garbanzo beans and cilantro and toss to mix. Add olive oil, vinegar, lime juice and salt and pepper to taste and toss again. Add Black Beans mixing well.

 I serve this with Lime/Cilantro chicken.

Lime/Cilantro Chicken

3-4 Perdue Perfect Portions chicken breast
4 limes squeezed
Fresh Cilantro sprigs

Marinate chicken in gallon Ziploc bag for 4 hours or overnight with lime juice and cilantro.  Grill chicken and serve with fresh Black Bean Salsa above.
